Abstract

In the article it is proposed the reconstruction of the social and profesional courses of Celina de Moraes Passos, who studied to be a teacher, was a nutritionist and one of the pioneers in the field of food and nutrition in Brazil. Although she had published some books, there are few records about her biography. Through the intangible heritage, it was reflected on the practices and representations of this teacher, researching them in memory centers of a technical school and two nutrition colleges, one in Sao Paulo and another in Rio de Janeiro. The prefaces of her jobs contributed to identify these courses, and based on primary and secondary sources, it was possible to employ the concept of school culture and the methodology of oral history to draw these courses in profesional education and in the Food Service of Social Security.
