Resumen

Recently the gastronomic heritage received media attention as different local dishes were identified as the representatives of regional cousine in Bolivia, they were called "platos bandera" [flag dishes]. The coverage that written press carried out regarding the choice of platos bandera in Bolivia is analyzed. Speaches and evaluations that the written press highlights in relation to the importance of gastronomic heritage are identified, and how the discourses relate to the academic postures of our heritage are analized.
