The pilgrimage is an universal experience found in all the religions. The motivations that tugs the pilgrim to walk toward a sacred place are related with researching of existential responses and spiritual wellness. The desired destination is reached after many days of walking with a minimal baggage across different villages and even countries with characteristic landscapes and customs. The pilgrimage on the Francigena route began since the medieval times, and the Tuscan segment is nowadays one of the most appreciated path for its natural beauties and its well conserved nutrition traditions. This paper makes a short overview on the culinary and accommodation hospitality in Tuscany along the Francigena route, since the medieval period till today.
