Abstract

In Mendoza the wine-growing industry has been the region s primary economic resource as well as its identity landmark, and where grapevine cultivation and wine production have created an authentic culture. One important symbolic element is the wine cellar, the place where the wine is produced, which is not an isolated object but part of a larger system together with the vineyards. This paper deals with the issue of industrial heritage from various perspectives: the historical, characterizing the wineries of each period and analyzing the recent boom in wine tourism; the historiography, introducing representative studies on the subject, and finally, the management, analyzing programs and activities that both government and private institutions develop to confer value to both the tangible and Intangible heritage of wine.
