The method used was microhistory with information obtained from the Historical Archive of the Municipality of Toluca and biblio-newspaper sources. The results show that there was a significant production of pulque in the municipality, there was a large number of establishments laid it out, the women were important in the marketing of the drink, and the railroad contributed to the distribution of the drink. We conclude that this gastronomic heritage was important for the municipality and the consumption of the beverage was widespread among the population.  a1405-0269
