It is observed that these risks come from the vulnerability presented by the community and the territory. In the case of the community, it shows the weak socioeconomic conditions, which have led to the rupture of the social fabric, causing the loss of the transmission of the knowledge of the sieve s job. As for the territory, the transformations in the use of the land and the abandonment of the grain crops to produce flours are observed, which causes the loss of food security, a reason for not using the sieve. Aspects to consider in the field of Intangible Cultural Heritage, it is necessary to pay attention to the communities, to their living conditions and the problems of their territories. a1390-7247
