A qualitative research was based on the analytical-descriptive methodology, seeking to establish conceptual questions and to understand the reception practices, commensality and hospitality present in the territory of São Paulo during the period. As a result of research, questions were raised regarding food and lodging, from the reception perspective. And through the results it is considered that the collection has a significant role for the preservation and maintenance of the intangible heritage of São Paulo, and cultural tourism is a tool for dissemination, dynamization and heritage education. a2386-8570
