El estudio del proceso que condujo a la inscripción de “la comida gastronómica de los Franceses” sobre la lista del patrimonio cultural inmaterial de la Unesco en 2010 pone en evidencia las dificultades encontradas para llegar a un acuerdo sobre la definición del objeto. La comida gastronómica de los Franceses finalmente aparece como un artefacto nacido de un compromiso entre la visión “gastronómica” de los defensores del proyecto y la representación “popular” del patrimonio defendida por la Unesco. This text questions the construction of patrimonial objects. To inscribe an object on a heritage list implies that it has previously been defined. The study of the process that lead to the inscription of “the gastronomic meal of the French” on the intangible cultural heritage list of the Unesco in 2010 brings to light the difficulties encountered to find an agreement on the object’s definition. The gastronomic meal of the French finally appears as an artifact arisen from a compromise between the “gastronomic” vision of the promoters of the project and the “popular” conception of heritage defended by Unesco.  a1168-1446
