In these periods, and depending upon the available foods, the populations adapted their food habits, consuming different natural resources that they would not use ordinarily, commonly named substitute foods. We are talking about acorns, widely used in Portugal, over different periods, but also about sorb tree, jujube and wild pears, hawthorn and myrtle fruits, Cytinus hypocistis, wild mushrooms, fennel, wild brambles, thistles, brave asparagus, among others. A preliminary survey with consumers of these products revealed that there was a significant set of practices in the oral heritage of the populations that allowed them to be used more systematically and effectively in times of shortage. The concept of substitute foods arose associated with the restrictive periods of the First and Second World Wars, where the severe rationing of some foodstuffs often led to their substitution by others, which were not regularly consumed. Some of these did not completely replace the original foods, but others gained their own status due to their distinct characteristics. In this presentation, we intend to show preliminary results on the use of substitute foods in the “montado” of Alentejo in the second and third quarters of the 20th century.The objectives of this text are therefore in line with the proposal contained in the 2003 UNESCO Convention, which calls for theSafeguarding of Intangible Cultural Heritage, which includes not only safeguarding but also the awareness of institutions andcommunities. a1808-5318, 2596-0121
