In this essay, our objective is to discuss the role of peasant communities in safeguarding intangible food cultural heritage. To this end, we discuss the theoretical framework of peasantry, pointing to its heterogeneity in Brazil and highlighting the perspective of resistance; we present the emerging debate about intangible cultural heritage associated with food; and we propose a dialogue between the discussions on peasantry andfood heritage. When analyzing the peasantry from the perspective of resistance (historical, everyday, permanence in the countryside and social and cultural reproduction of their ways of life), we argue that the different intangible cultural heritages are components of their daily lives and are reproduced in it. a2237-8294
